I’ve been a fan of artichokes since I was a kid (thanks, Mom). I’ve tried a million times to try to get my kids to try them, but I’ve had no luck. Until I made these air fryer artichoke hearts with garlic aioli. Now they can’t get enough!

These air fryer artichoke hearts are so good and incredibly easy to make. All you need is an air fryer and 30 minutes.

In addition to being a fat-free, low-sodium food, artichokes are also rich in key nutrients, including potassium, fiber, vitamin k, magnesium and folate. They are are believed to contain antioxidants.

You’ll want to buy the canned quartered artichoke hearts in water. If they don’t have quartered, you can buy whole, but you might want to quarter them yourself. I typically buy 3-4 cans to make for our family of five and there are never leftovers.

I find that shredded parmesan or shaved parmesan works best for this recipe. The parmesan cheese is going to melt in the air fryer, so whichever you use should be fine!

You can purchase Italian seasoning in the spice aisle of your local grocery store. If you are unable to find it, you can also make your own using thyme, basil, rosemary and oregano. I like to make mine in batches and store it with my other spices.

The garlic aioli dip is optional, but really compliments the air frier artichoke hearts. The combination is tangy and delicious. Just like a good potato chip, you won’t be able to eat just one.

If you don’t have an air fryer and you’ve been thinking of getting one, I have the PowerXL 5qt Single Basket Air Fryer. I purchased mine on black Friday a couple years back and I love it!

Air Fryers are a great way to make your favorite fried foods in a much healthier way since they aren’t frying in a pan full of oil. While not super healthy, one of our favorite air fryer treats are air fried oreos. A good air fryer can save you time and cleanup is super easy.

Since I’m sure I’ll get questions about the bowl I used in the photos, it’s the new medium enameled wood bandana print serving bowl, made by Levi’s and sold at Target. I have the smaller one in red as well. They are gorgeous, lightweight serving bowls and a must have if you love your serving dishes to be as beautiful as the food you put on them.
