This easy BBQ vegetable stir fry can be prepared in just 10 minutes. Paired with rice, it’s a quick, healthy, and delicious family meal idea.
Ingredients

- Broccoli florets
- Carrots, sliced or chopped
- Snow peas
- Shitake mushrooms
- 1 can Baby corn
- ¼ cup peanuts or cashews
- ¼ cup Chinese or Korean BBQ sauce
- 1 tbsp Sesame Oil
- Ground ginger, to taste
- Garlic powder, to taste
- Salt, to taste
Optional Toppings:
- Fried Noodles
- Peanuts or cashews
- Fresh minced celery
Instructions
- Heat sesame oil in a skillet or wok over medium-high heat.
- Once the oil is hot, reduce the heat to medium, add veggies, baby corn, and peanuts/cashews.
- Sprinkle ginger, garlic powder, and salt. Stir frequently for 3 minutes.
- Add bbq sauce and stir until veggies are coated. Continue stirring occasionally for another 4-5 minutes or until you’ve reached the desired crispness of your veggies.
- Serve with or without rice. Top with a few fried noodles, peanuts, cashews, or minced celery for texture.
- Drizzle bbq sauce on top and serve!
