Easy BBQ Vegetable Stir Fry

Description

This easy BBQ vegetable stir fry can be prepared in just 10 minutes. Paired with rice, it’s a quick, healthy, and delicious family meal idea.


Ingredients

Scale
  • Broccoli florets
  • Carrots, sliced or chopped
  • Snow peas
  • Shitake mushrooms
  • 1 can Baby corn
  • ¼ cup peanuts or cashews
  • ¼ cup Chinese or Korean BBQ sauce
  • 1 tbsp Sesame Oil
  • Ground ginger, to taste
  • Garlic powder, to taste
  • Salt, to taste

Optional Toppings:

  • Fried Noodles
  • Peanuts or cashews
  • Fresh minced celery


Instructions

  1. Heat sesame oil in a skillet or wok over medium-high heat. 
  2. Once the oil is hot, reduce the heat to medium, add veggies, baby corn, and peanuts/cashews.
  3. Sprinkle ginger, garlic powder, and salt. Stir frequently for 3 minutes. 
  4. Add bbq sauce and stir until veggies are coated. Continue stirring occasionally for another 4-5 minutes or until you’ve reached the desired crispness of your veggies. 
  5. Serve with or without rice. Top with a few fried noodles, peanuts, cashews, or minced celery for texture. 
  6. Drizzle bbq sauce on top and serve!
