Kosher for Passover Chocolate Chip Cookies

Description

Not only are these incredibly delicious chocolate chip cookies kosher for Passover, but they are also gluten free and flourless! 


Ingredients

Scale
  • 14oz bag of walnuts, ground
  • 1 stick kosher for Passover butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 cup potato starch (I use Manischewitz) 
  • 1 cup milk chocolate chips


Instructions

  • Grind the walnuts in a food processor until fine.
  • Cream butter and both sugars in a stand mixer until smooth.
  • Add the egg and vanilla extract and mix until combined.
  • Add ground walnuts and potato starch to the bowl and mix until combined.
  • Stir in chocolate chips until evenly distributed. 
  • Refrigerate dough for 1 hour.
  • Preheat oven to 350º and line a cookie sheet with parchment paper. 
  • Using a small scoop, scoop dough onto the cookie sheet, leaving space in between each. 
  • Roll each scoop into a ball.
  • Using your fingers or the bottom of a cup, press each ball of dough down a bit. Bake for 13 minutes.
  • Allow the cookies to cool for 5 minutes and then move the cookies to a cooling rack.
  • Prep Time: 7 minutes
  • Cook Time: 13 minutes
