Description
Not only are these incredibly delicious chocolate chip cookies kosher for Passover, but they are also gluten free and flourless!
Ingredients

- 14oz bag of walnuts, ground
- 1 stick kosher for Passover butter, softened
- 3/4 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1 cup potato starch (I use Manischewitz)
- 1 cup milk chocolate chips
Instructions
- Grind the walnuts in a food processor until fine.
- Cream butter and both sugars in a stand mixer until smooth.
- Add the egg and vanilla extract and mix until combined.
- Add ground walnuts and potato starch to the bowl and mix until combined.
- Stir in chocolate chips until evenly distributed.
- Refrigerate dough for 1 hour.
- Preheat oven to 350º and line a cookie sheet with parchment paper.
- Using a small scoop, scoop dough onto the cookie sheet, leaving space in between each.
- Roll each scoop into a ball.
- Using your fingers or the bottom of a cup, press each ball of dough down a bit. Bake for 13 minutes.
- Allow the cookies to cool for 5 minutes and then move the cookies to a cooling rack.
- Prep Time: 7 minutes
- Cook Time: 13 minutes
