ZUCCHINI BACON

HOW TO MAKE

Looking for a veggie alternative to bacon? This crispy zucchini with a smoky flavor is a great option! This vegetarian and vegan friendly zucchini bacon will become a favorite!

INGREDIENTS

– Thinly Sliced Zucchini – Olive Oil – Maple Syrup – Low Sodium Soy Sauce – Apple Cider Vinegar – Liquid Smoke – Fresh Ground Black Pepper

INSTRUCTIONS

Whisk together all ingredients (except zucchini). Place marinade in a sealable bag or container with a lid and add slices of zucchini.

Marinate for at least 3 hours. Preheat oven to 200 degrees. Place zucchini strips on a parchment lined baking sheet.

Bake for an hour, turn each slice over and repeat. When you have the desired consistency (soft or crunchy), remove from oven and enjoy!

Zucchini bacon is great for sandwiches. I would also eat it as a snack. Once you start eating this, you can't stop!
