So we went on the hunt for a satisfying vegetarian sandwich and I’m happy to say that we found it.

When I told my husband that I was making him a vegetarian sandwich for lunch, I think he was a little hesitant. Being meat-free is still pretty new to him, so when I offered him a sandwich filled with veggies, I figured that he imagined a salad with two slices of bread. Instead, he wound up eating three sandwiches and would have eaten a fourth if I had anymore bread left. It was that good!
The combination of the creamy avocado, veggies, crunchy zucchini bacon and Udi’s Gluten Free Multigrain Bread is nothing short of perfection. It leaves you satisfied without feeling guilty or overly stuffed. I love that it’s easy to make and a sandwich that my entire family can enjoy.

Ingredients
- 4 slices Udi's Multigrain Bread
- 1 haas avocado (sliced)
- 2-3 slices Zucchini Bacon
- ½ cucumber (sliced lengthwise)
- 2 slices tomato
- sprouts
- balsamic vinegar
- salt, to taste
Instructions
- Toast the bread slightly (toaster or oven)
- Place all veggies on the bread
- Sprinkle balsamic vinegar and salt to taste

That is one fine looking sandwich! I’ve never tried Udis bread, but it looks amazing. I think I’ll pick some up on my next grocery shopping trip.

I never would have thought to put mung bean sprouts on a sandwich, but why not? They’re refreshing and crispy and would add a nice texture variance to a sandwich. This one looks delicious!
