When you don’t eat meat, you have to come up with new options for lunch. There are only so many salads you can eat, let’s be honest. Sometimes you just want a good ol’ sandwich. Being new to the vegetarian world, we have struggled with finding lunches that fill us up and also provide the nutrients we need. So we went on the hunt for a satisfying vegetarian sandwich and I’m happy to say that we found it.
After visiting a phenomenal vegan restaurant and having an avocado sandwich that was better than any meat filled sandwich I’ve ever eaten, I was finally confident that we could master the vegetarian lifestyle without sacrificing taste. The sandwich was packed with veggies, drizzled with balsamic vinegar and was absolutely delicious. When I told my husband that I was making him a vegetarian sandwich for lunch, I think he was a little hesitant. Being meat-free is still pretty new to him, so when I offered him a sandwich filled with veggies, I figured that he imagined a salad with two slices of bread. Instead, he wound up eating three sandwiches and would have eaten a fourth if I had anymore bread left. It was that good!
The combination of the creamy avocado, veggies, crunchy zucchini bacon and Udi’s Gluten Free Multigrain Bread is nothing short of perfection. It leaves you satisfied without feeling guilty or overly stuffed. I love that it’s easy to make and a sandwich that my entire family can enjoy.

The Ultimate Vegetarian Sandwich
Description
The combination of the creamy avocado, veggies, crunchy zucchini bacon and Udi’s Gluten Free Multigrain Bread is nothing short of perfection.
Ingredients
- 4 slices Udi's Multigrain Bread
- 1 haas avocado (sliced)
- 2–3 slices Zucchini Bacon
- ½ cucumber (sliced lengthwise)
- 2 slices tomato
- sprouts
- balsamic vinegar
- salt, to taste
Instructions
- Toast the bread slightly (toaster or oven)
- Place all veggies on the bread
- Sprinkle balsamic vinegar and salt to taste

March 27, 2018A friend of mine has to be gluten-free and I’m pretty sure she buys the spread. I have never heard of zucchini bacon. Now that sounds quite interesting to me. I am not a vegetarian but I do try to eat healthy and if this taste like bacon I am going to eat every last bit of it the minute I get it.
