When you don’t eat meat, you have to come up with new options for lunch. There are only so many salads you can eat, let’s be honest. Sometimes you just want a good ol’ sandwich. Being new to the vegetarian world, we have struggled with finding lunches that fill us up and also provide the nutrients we need. So we went on the hunt for a satisfying vegetarian sandwich and I’m happy to say that we found it.
After visiting a phenomenal vegan restaurant and having an avocado sandwich that was better than any meat filled sandwich I’ve ever eaten, I was finally confident that we could master the vegetarian lifestyle without sacrificing taste. The sandwich was packed with veggies, drizzled with balsamic vinegar and was absolutely delicious. I’ve been dying to recreate it and finally have the opportunity, thanks to Udi’s® NEW Delicious Multigrain Bread. The best part was that it was even better than I remembered. To me, it is the ultimate vegetarian sandwich.
When I told my husband that I was making him a vegetarian sandwich for lunch, I think he was a little hesitant. Being meat-free is still pretty new to him, so when I offered him a sandwich filled with veggies, I figured that he imagined a salad with two slices of bread. Instead, he wound up eating three sandwiches and would have eaten a fourth if I had anymore bread left. It was that good!
The combination of the creamy avocado, veggies, crunchy zucchini bacon and Udi’s Gluten Free Multigrain Bread is nothing short of perfection. It leaves you satisfied without feeling guilty or overly stuffed. I love that it’s easy to make and a sandwich that my entire family can enjoy.
About Udi’s
Udi’s is a game changer and the only gluten free bread that delivers a wholesome, delicious taste, soft texture and the right size for your needs. Not only is it certified gluten free, dairy and nut free, but it also contains other vitamins and minerals and it’s DELICIOUS! For this particular sandwich, I decided to toast the bread lightly in the oven at 200 degrees. It gave the crust a nice little crunch that really complemented the sandwich. While you could add some vegan mayonnaise to it, it really didn’t need it.
If anyone in your family can’t have gluten, or if you just want to cut gluten from your own diet like we have been doing, I highly recommend checking out Udi’s NEW Delicious Multigrain Bread. You will definitely be surprised at how good it really is.
By the way, now is a great time to try it out! During the month of March, NEW Udi’s Delicious Bread products will be on the shelf and on sale. Make sure to look for the at-shelf coupon machine featuring an offer of “$1 off Udi’s Gluten Free Bread” in stores from February 26 to March 28 (while supplies last).
You can find Udi’s NEW Delicious Multigrain Bread in the frozen/gluten free section at Publix. The 24oz varieties offer 30% larger size slices, mirroring a conventional sandwich bread. It’s available in white or multigrain and is the perfect option for your gluten free diet needs.

Zucchini bacon sounds really interesting. That sandwich looks great. And frankly Udi’s makes great products. We have used them here in the past too. Love seeing how they have evolved. I will need to take a look at Udi’s again.
ANYTHING with avocado and I am SOLD!
That looks like a fabulous sandwich!! Out of all the gluten free breads I have tried, UDi’s is definitely one of my favourite!!! I’ll have to recreate this sandwich for lunch tomorrow
Oh my goodness now that is an amazing sandwich. I have to admit I am liking the sound of the multigrain bread as well, I will have to give that a try.
I have many friends who are vegetarian. They would love to have this type of sandwich. This is what is called innovation: vegetarian sandwiches. Goes against the norm, and that’s a great thing!
A friend of mine has to be gluten-free and I’m pretty sure she buys the spread. I have never heard of zucchini bacon. Now that sounds quite interesting to me. I am not a vegetarian but I do try to eat healthy and if this taste like bacon I am going to eat every last bit of it the minute I get it.
We’ve used UDI bread in the past. It’s a great toast bread. I’ll have to try this sandwich with it.
