Remember that story I posted the other day, showing you guys the homemade ice cream and asked you to guess the flavor? It’s finally time to reveal the big secret! Sunday is National Ice Cream Day, so we wanted to come up with an extra special recipe. We decided that creating an ice cream pie, inspired by a candy bar, would be a fun idea. And while our family has MANY different "favorite" candy bars, as soon as I mentioned this one, they were all in! The combination of toasted coconut and toasted almond ice cream, with chocolate ganache, on a chocolate pie crust and topped with shredded coconut and almonds, sounded so good, they made me go to the store immediately to pick up all of the ingredients. Summer is flying by, isn’t it? Not only have the girls been keeping up with their Summer reading, but they had read all of the books I got them by the end of June!     I wanted my daughter to be involved in at least one sport but she would not have any of that. She did enjoy dancing though, so I fully supported that. She, along with other girls in her school won dance competitions and I am so proud of her! Girls can go whatever they set their hearts and minds into!

    Raising two Hispanic girlies, we provided them with unique educational experiences outside the classroom and constantly reminded them that they could be whatever they wanted to be! Both graduated from universities early, with one being an engineer and (as of this past Friday) also graduating from law school, and the other working for a big corporation. We’re so proud of them both. Girls can absolutely achieve their big goals and dreams!
