I’m back with another fun and super easy treat for Easter and Spring! These brookie-o’s with m&m’s are packed with layers of fudgy brownies, Oreos, chocolate chip cookies, and m&ms. There is goodness in every single bite.

Can you make your own brownie batter? Absolutely.

Can you make your own chocolate chip cookie dough? Absolutely.

But for those times when you are short on time and want to make a fun dessert or snack, I found this cookie brownie bars mix. Of course, I had to take it a step further and make it a little more eggstra for you by adding Oreos and m&ms.

What is the easiest way to soften butter?

I leave mine out of the refrigerator for about 30 minutes. If you are short on time, you can put it in the microwave (with the paper wrapping) for 15-20 seconds and smush it a bit with your hands. It’s usually perfectly softened that way.

What type of m&ms did you use?

I bought the Easter m&m’s. I love the pretty pastel colors. They are perfect for these brookie-o’s! You can always use regular m&m’s if you can’t find these. They will taste the same!

Where did you find this cookie brownie bars mix?

I found this cookie brownie bars mix at Target. You can also check your local grocery store in the baking aisle, next to the cake and cookie mixes.

How many brookie-o’s does this recipe make?

That depends on how you slice them. I typically cut them into 9 pieces, but if you want to serve smaller pieces, you can cut them as you wish. While you can use just a regular knife, I use a large pastry dough cutter.  The large size is the perfect size to cut your brownies or brookie-o’s in one shot and it easily slices through. I use it all the time. If you make bread, it can also be used for dough.

I’ve tried to show the steps in the photos above for you to make it a bit easier to make these brookie-o’s with m&ms.

  1. Add brownie mix, egg, water and vegetable oil, according to the package.
  2. Stir until combined.
  3. Grease an 8×8 brownie pan and pour the brownie batter in, making sure it’s level.
  4. Push Oreos into the brownie batter in rows and columns of four.
  5. Add chocolate chip cookie mix, water and butter, according to the package.
  6. Stir until combined.
  7. Scoop the cookie dough on top of the Oreos in rows and columns of three.
  8. Bake at 350º for 15 minutes and remove from the oven.
  9. Sprinkle m&m’s on top and return to the oven for an additional 19 minutes.
  10. Remove from the oven and allow to cool for 15-20 minutes before slicing into 9 pieces.

  • Preheat the oven to 350º and grease an 8×8 brownie pan.
  • Add brownie mix, egg, water, and vegetable oil, according to the package.
  • Stir until combined.
  • Pour the brownie batter into the prepared brownie pan, making sure it’s level. 
  • Push Oreos into the brownie batter in rows and columns of four.
  • Add chocolate chip cookie mix, water, and butter, according to the package.
  • Stir until combined.
  • Scoop the cookie dough on top of the Oreos in rows and columns of three.
  • Bake for 15 minutes and remove from the oven.
  • Sprinkle m&m’s on top and return to the oven for an additional 19 minutes.
  • Remove from the oven and allow to cool for 15-20 minutes before slicing into 9 pieces.
  • Prep Time: 10 min
  • Cook Time: 35 min
