In 2017, tired of my debilitating anxiety disorder, I went to see a new doctor. She was sure my anxiety was the result of a medical condition. After routine bloodwork, I was told I had a vitamin D deficiency. But that’s it. I left without any more answers than I walked in with. Let’s talk about family vacations... #gifted I struggled for years with the amount of time it took to pack up to go back home. There were always dirty clothes all over the floor and while I tried to pack it all into those hotel provided plastic laundry bags, 1) they were plastic and we are trying our best to do better for our planet and 2) they rip so easily, so we often wound up with dirty clothes spilling out in the car (yuck). A couple of months ago, I was watching a friend’s Instagram stories and she was talking about the @swoopbags she uses for her son’s toys. I immediately had an idea and knew I had to get one. 
On our last vacation, I opened up my large swoop bag and left it flat in the corner of our hotel room. We used it as our “laundry corner”. We instructed the kids (and ourselves) to drop our dirty laundry in the middle of the flattened Swoop bag. When it was time to pack up, I just swooped the bag, tied it and voila… it literally saved me all of the aggravation of finding and picking up all of the clothes and trying to find something to carry it all in. As a family, we road...

Growing up, I always wanted a sibling. I wished over every star and every birthday candle. I even asked my magic eight ball constantly if I would ever have one but as many times as it told me “all signs point to yes”, I remained an only child. I look forward to the days when my three girls appreciate that they have best friends for life... two women who will always have their back, lend them a hand or provide a shoulder to cry on. In the meantime, I make sure to create fun reasons for them to “work” together without bickering. Looking for an easy and fun recipe for Spring and Easter treats? Check out these adorable chocolate chick egg nest treats! A recipe so simple, your kids will be able to help and a treat so delicious, they’ll beg you for more. These cute little nests are made from handmade rice cereal treats, shaped like a bird’s nest, shredded coconut and three colorful chocolate eggs. It’s an inexpensive and easy treat for the whole family. These are perfect for your next Easter party or just for an after school snack!

When it comes to holiday treats, I try to come up with options that are quick. When you have three very impatient kids in the house, you really don’t have any other option. These treats took about 15 minutes and that was only because I didn’t realize how sticky they really are. My advice, make sure you have wax or parchment paper on hand! Which reminds me…

Ziplock bag
Muffin Tin
Cupcake Liners (optional)
Something Small and Round

Chocolate Chick Eggs in a Nest

The perfect treat for Easter. Rice cereal treats, filled with coconut and topped with chocolate candy eggs.

Ingredients

  • 6 cups rice cereal
  • 10 oz puffed marshmallows
  • 3 TBSP butter
  • 1 cup shredded coconut
  • 7-10 drops green food coloring
  • 1 bag chocolate egg candies

Instructions

  • Place the shredded coconut in a ziplock bag and add food coloring. Mix until coconut turns green. Set aside.

  • Place butter in a sauce pan and heat on low.
  • Once butter has melted, add marshmallows and stir until melted.
  • Remove from heat.
  • Add rice cereal and stir until completely mixed.

  • Spray muffin tin with non-stick spray or lightly spread butter in each section.
  • Fill each section with the finished cereal mix.
  • Take something round, cover it with wax paper and push down in the center of each treat. This will help to create the nest shape. Repeat with all.

  • Remove from the tin and place on a plate.

  • Fill each with green coconut.

Want to Create the Bunnies Too?

After we were done with the chocolate chick egg nest treats, we wanted to create a little bunny as well. What’s more Easter than bunnies and chicks? The bunny is super easy to do. Just take some shredded coconut that hasn’t been dyed and add the rabbit feet and tail. These cute little tail and feet candy pieces can be purchased at Target for under $5. They also come with white sprinkles that you can use instead of the coconut (or save them for your next baking project).

We don’t have kids of our own but we had 2 foster kids for nine months, 10 years ago, and despite getting to go back with their mom, they have remained a huge part of our life! I am very grateful to their mom for that!!     I always make the birds nests and let the grandkids decorate the coconut and place the eggs in the nest. Great way to spend sometime in the kitchen.
