In just about a month...

Thinking back to last month and our stay in that cute little airbnb, it makes me so grateful for the opportunity to blog full-time. Thinking back to last month...

Today I had a plan. Wake up early, get the girls ready for their first day of school and then take the perfect first day of school picture to post on Instagram, where I would talk about how bittersweet it is to watch my girls grow up into these incredible young women. 
But things don’t always go as we plan. Instead, Falynn and Iyla woke up at 3:30am, got ready for school and then came downstairs at 5:00am to let us know they were ready. 5:00am... two and a half hours before they actually needed to be at school. I rolled myself out of bed at around 6:50am, Super Dad made me some coffee and I quickly shooed them outside so I could take a picture and realized that Falynn was in a long sleeved shirt, a jacket, jeans and old sneakers. I’m pretty sure her hair wasn’t brushed either. Lucia wasn’t awake yet so it would be the first year without a first day of school picture of all three of them. 😫 Whatever. I was tired. So I quickly took a picture (swipe to see) and got them off to school. Lucia woke up late and I couldn’t take a picture of her because my camera lens kept fogging up. When we walked back into the house, the dog escaped, making her even later. 🤦🏻‍♀️ And my coffee’s cold. My girls are snackers. Looking for an easy and fun recipe for Spring and Easter treats? Check out these adorable chocolate chick egg nest treats! A recipe so simple, your kids will be able to help and a treat so delicious, they’ll beg you for more. These cute little nests are made from handmade rice cereal treats, shaped like a bird’s nest, shredded coconut and three colorful chocolate eggs. It’s an inexpensive and easy treat for the whole family. These are perfect for your next Easter party or just for an after school snack!

When it comes to holiday treats, I try to come up with options that are quick. When you have three very impatient kids in the house, you really don’t have any other option. These treats took about 15 minutes and that was only because I didn’t realize how sticky they really are. My advice, make sure you have wax or parchment paper on hand! Which reminds me…

Ziplock bag
Muffin Tin

Chocolate Chick Eggs in a Nest

The perfect treat for Easter. Rice cereal treats, filled with coconut and topped with chocolate candy eggs.

Ingredients

  • 6 cups rice cereal
  • 10 oz puffed marshmallows
  • 3 TBSP butter
  • 1 cup shredded coconut
  • 7-10 drops green food coloring
  • 1 bag chocolate egg candies

Instructions

  • Place the shredded coconut in a ziplock bag and add food coloring. Mix until coconut turns green. Set aside.

  • Place butter in a sauce pan and heat on low.
  • Once butter has melted, add marshmallows and stir until melted.
  • Remove from heat.
  • Add rice cereal and stir until completely mixed.

  • Spray muffin tin with non-stick spray or lightly spread butter in each section.
  • Fill each section with the finished cereal mix.
  • Take something round, cover it with wax paper and push down in the center of each treat. This will help to create the nest shape. Repeat with all.

  • Remove from the tin and place on a plate.

  • Fill each with green coconut.

Want to Create the Bunnies Too?

After we were done with the chocolate chick egg nest treats, we wanted to create a little bunny as well. What’s more Easter than bunnies and chicks? The bunny is super easy to do. Just take some shredded coconut that hasn’t been dyed and add the rabbit feet and tail. These cute little tail and feet candy pieces can be purchased at Target for under $5. They also come with white sprinkles that you can use instead of the coconut (or save them for your next baking project).

    These are the cutest eggs in a nest. I love the Bunny tails too. These would be so pretty on my Easter dessert buffet. I know my grandkids will love these.

    I’ve never made anything remotely like this before but I’m ready to start. These are so adorable and yummy looking, I think I’ll try to make them next week before the grandkids arrive. I’m fixing to check out your baskets on a budget.

    I always make the birds nests and let the grandkids decorate the coconut and place the eggs in the nest. Great way to spend sometime in the kitchen.
