
The girls have been back to school for almost a month already. Can you believe it? They love their teachers, are happy to see their friends again after a long summer vacation and are looking forward to a year packed with education, fun and new experiences. While they’re at school, Super Dad and I are working hard to make sure they have everything they need. At the top of that list, is a healthy and yummy lunch. When you have three girls with very different tastes, it’s important to make sure they are getting what they like, but more importantly, what they need. Our latest creation? This dairy-free rainbow pepper pizza making kit featuring Daiya dairy-free Mozzarella Style Cutting Board Collection Shreds!
It’s pretty simple to put together! All you’ll need is:
- Flatbread or crackers
- Marinara sauce
- Chopped up bell peppers in a variety of colors
- Dairy-free Daiya Mozzarella Style Cutting Board Collection Shreds
- Any other toppings your kids may enjoy
Using a BPA-free stacking bento box lunch box that has 4 compartments and is microwave-safe, I’m able to provide all of the necessary ingredients to create this fun and yummy recipe!
I fill the two smaller containers with marinara sauce and Daiya Mozzarella Style Cutting Board Collection Shreds. Daiya’s Cutting Board Collection Shreds have more dairy-like flavor, texture and aroma than ever, and stretch and melt like the real thing! It’s hard to tell that they are dairy-free!
The first big compartment is filled with their favorite healthy topping(s). In Falynn’s case, that’s red, orange, yellow and green bell peppers, placed to look like a rainbow. The final compartment holds the base for your pizza. We use flatbread or crackers.
The best part about this lunch box idea is that Falynn doesn’t need to bring an extra snack because she snacks on the leftover peppers, once she’s finished enjoying her pizza. When you are creating yours, make sure that the toppings you include are things that your kids already love! You’re more likely to get an empty lunchbox at the end of the school day.
Your kids can easily put together their pizza at school, by spreading marinara sauce on the bread or crackers and then placing the toppings on. The pizza can be eaten as is, or if the school allows them to, they can microwave the pizza as well. Just make sure that the container is microwave-safe!
This also makes the perfect after school snack because it’s easy to make and the kids love it! Falynn has even made Super Dad and I a dairy-free pizza and has become quite the little chef! She loves to switch up the toppings and see what she can create!

Awesome lunch! I love that your child is eating healthy. I will have to look for that Daiya brand dairy free cheese too. I think that would be nice to have in stock for those spur of the moment cheesy recipe needs.
