Back to school time has arrived. Time to think about getting back into the routine, packing lunches, waking up on time and making sure that the house is full of healthy and fun snacks. At least that’s what it’s like in our house. This week, I’ve been working on coming up with some fun snack ideas that the girls can create themselves, when they get home from school. They love to prepare things that they can eat easily, while they do their homework. Their favorite ingredient? Peanut butter! So here are our family’s 5 fun snack ideas that include peanut butter!

Banana, Peanut Butter, Coconut and Chocolate Chips

Banana and peanut butter is one of those flavor combinations that most people absolutely love. We took it up just a notch and added a few chocolate chips and sprinkled it with shredded coconut. Cut them in bite sized pieces for the kids and it’s an instant hit!

Crackers, Peanut Butter, Jelly and Berries

While my kids can eat a pb&j sandwich anytime, for snack time, they prefer using crackers or Melba toast. They are bite sized and perfect for their little hands. Top the cracker or Melba toast with jelly, peanut butter and your favorite berry! We love blueberries or strawberries. Yum!

Celery, Peanut Butter and Trail Mix

Growing up, I was always given, what we called, “ants on a log”.  Celery, peanut butter and raisins. That flavor combination still instantly transports me to my Nana’s kitchen table. We decided to kick it up a notch and swap the plain raisins for trail mix. Of course, my kids chose the trail mix that had little chocolate pieces in them, but you can buy it without if you aren’t interested in the added sugar. Fill the celery’s valley with peanut butter and top with your favorite parts of the trail mix. The kids can use this opportunity to practice their counting and/or patterns!

*Fun fact: We couldn’t figure out what to call that part of the celery so we asked the girls…. They came up with “celery nut or cel-nut”, “celery crook”, “celery dugout” and “celery bunker”.  What do you call it?

Apple, Peanut Butter, Sunflower Seeds and Coconut

We’ve always enjoyed apples and peanut butter in our house, but we have been trying to come up with something else that goes well with them. We did share the peanut butter sandwich with coconut recipe, which we still love, but I challenged the girls to come up with a topping that would go well with those three ingredients. When sunflower seeds came up, I wasn’t sure we’d love it. Originally, the girls wanted chocolate covered sunflower seeds, but we couldn’t put chocolate on all of the options. We were very pleasantly surprised by this combination. I love the crunch and saltiness it added. Slice your apples, top with peanut butter and sprinkle with sunflower seeds (chocolate covered or not) and shredded coconut. I think you’ll be surprised by this one.

Pretzel, Peanut Butter, Chocolate Chips and Sprinkles

Ever since we bought a chocolate covered pretzel at Disney World years ago, we have been hooked! I wanted to come up with an option that the girls could easily make at home.  Take a pretzel rod, spread peanut butter on the upper half, all the way around and then roll your favorite toppings. The girls chose dark chocolate chips and sprinkles. It doesn’t harden the way chocolate does, but it also didn’t fall apart like I thought it would, so it’s a great option for the kids.

  • Peanut butter is one of my favourite snacks! As a kid, it was never allowed in school (because of allergies), and my brother was allergic at home, so I had to eat it whenever he was out of the house.
