When I think of Spring, I think of light, fruity flavors. Although lemon kept coming up, I’m not a big fan of lemon in desserts. So when we were brainstorming what recipes we were going to work on for Spring, I knew that I leaned more toward pineapple. Piña colada was the first thing that popped into my mind and before I knew it, we were making piña colada puff pastries.
This was a tough one. I mentioned the recipe to the family and got a lot of unsure looks. But I knew as soon as they tasted them, they would change their minds. The flaky puff pastry filled with pineapple and coconut sounded perfect to me and was so good on its own, it didn’t even need a topping!
It wasn’t long before they were all gone and I had requests for a second batch. That’s how I know that recipes are good enough to share. My family is a tough focus group and while they may tell me things are yummy, if they don’t go in for seconds, I know that they just don’t want to hurt my feelings. Is anyone else’s family like that?
Where do I find store-bought puff pastry?
You can usually find store-bought puff pastry sheets in your grocery store’s freezer section by the frozen pies. Find the Pepperidge Farm puff pastry sheets the easiest to work with, but any brand will do! Since they are frozen, you’ll want to take them out of the freezer about 30 minutes before you are ready to make the piña colada puff pastries. The pastry sheets should be as close to room temperature as possible so that they are easy to roll.
What is the easiest way to melt butter?
I put a teaspoon of butter in a small microwave-safe bowl and into the microwave for 15-20 seconds at a time until it’s fully melted.
Where do I find pineapple preserves?
I use Smuckers Pineapple Preserves. I found it in the ice cream toppings section of my local grocery store. If you don’t find it in that section, check where the jellies and jams are.
Should I use sweetened or unsweetened coconut?
I use sweetened coconut, but that’s up to your taste. If you prefer the piña colada pastries to be a little less sweet, you can try unsweetened coconut. Just take note that unsweetened coconut is dry and may change the consistency and overall flavor of the pastries.
Now that I’ve hopefully answered all of your questions about these piña colada pastries, let’s talk about the ingredients and the recipe!
I’ve tried to show the steps in the photos above for you, to make it a bit easier to make these piña colada pastries.
- Place the puff pastry dough flat on a flat surface with the lines vertical (the opposite of how it’s shown in my photo above).
- Brush the top of the dough with melted butter.
- Leaving a 1-inch border around all edges, spread pineapple preserves all over the top of the puff pastry dough.
- Sprinkle shredded coconut on top of the jam, again, leaving a 1-inch border all around.
- Tightly roll the dough upward and away from you, making sure that the seam winds up on the bottom.
- Cut the ends off of the rolled pastry puff dough.
- Cut the remaining dough into 8-9 round pieces.
- Place them face-up on the parchment-lined baking sheet. Bake at 350º for 23-25 minutes, or until golden brown.

Ingredients
- 1 sheet of store-bought puff pastry, thawed
- 8oz pineapple preserves/jam
- 1/4 cup shredded coconut
- 1 tsp unsalted butter, melted
Instructions
- Preheat the oven to 350º and line a baking sheet with parchment paper.
- Place the puff pastry dough flat on a flat surface with the lines vertical.
- Brush the top of the dough with melted butter.
- Leaving a 1-inch border around all edges, spread pineapple preserves all over the top of the puff pastry dough.
- Sprinkle shredded coconut on top of the jam, again, leaving a 1-inch border all around.
- Tightly roll the dough upward and away from you, making sure that the seam winds up on the bottom.
- Cut the ends off of the rolled pastry puff dough.
- Cut the remaining dough into 8-9 round pieces and place them face-up on the parchment-lined baking sheet.
- Bake for 23-25 minutes or until golden brown.
- After five minutes, move to a cooling rack and allow to cool fully.
