These apple cinnamon pancakes are the perfect breakfast treat for fall and back-to-school season. With a hint of cinnamon and a delicious apple flavor from the sparkling apple juice, these pancakes will have you ready for falling leaves and colder weather.

Sparkling apple juice is a great addition to pancake batter if you’re looking for a flavor-filled pancake recipe. Not only does it  moisten the pancakes, but it adds the sweet apple flavor without the extra sugar. These pancakes are a perfect way to mix up your typical weekend breakfast or even a quick fun after-school snack recipe that you can make ahead of time and freeze for later, and they’re easy to make for a crowd; plus, your whole family will love them!

equipment:

You don’t need any special equipment to make apple cinnamon pancakes, though I find that it makes the process easier if you have a griddle since you can make more pancakes at once.

I use a large cookie scoop to ensure that the pancakes are around the same size.

ingredients:

You can use any brand of pancake mix that only requires adding water.

While I use Zevia Kidz Fizzy Apple because it’s made with Stevia and not sugar, you can use any sparkling apple juice for this recipe. If you want the recipe to remain sugar free, make sure that the brand you choose does not contain sugar.

Ground cinnamon is the ingredient that is going to tie all of the flavors together. You can adjust the amount based on your taste preference.

To keep these apple cinnamon pancakes sugar free, I top them with sugar free maple syrup. There are several in the stores that are incredibly delicious and don’t lack the sweetness that traditional maple syrup contains.

tips:

Make sure that the sparkling apple juice is cold. This will make the difference when you are mixing the batter.

You’ll want to let the batter sit for 2 minutes. You can do this while waiting for your skillet or griddle to heat up.

You can use anything to grease the skillet or griddle. I tend to use either avocado oil spray or butter. Either of them will work. The butter will give you a buttery flavor for the pancakes, but it doesn’t make much of a difference.

In the mood for waffles instead? You can use this batter in a waffle maker and make apple cinnamon waffles! They are just as delicious.
