Do you love casseroles as much as we do? There is something about being able to cook and serve a dish, all in one baking dish, that makes my heart happy (and Super Dad even happier because he doesn’t have to wash the million pots and pans that I usually leave in the sink for him). This year, Super Dad’s birthday falls on Father’s Day, so in order to incorporate all of his favorite ingredients into one special meal, we decided on a casserole (and it was a great choice). This cheesy barbecue chicken and loaded potato casserole is incredibly easy to prepare and features every single one of his favorite foods (even bacon)!
You want to make sure that you are chopping your potatoes and chicken to a size that is not too big or they won’t cook properly. I also chose to leave the skin on the potatoes because I think it brings something extra to the dish. You can choose to peel them if you’d like, but tack on another 10 minutes or so in prep time.
Now technically, because you have to cook the bacon, you are going to have to use more than just the baking dish for this cheesy barbecue chicken and loaded potato casserole, BUT… it’s bacon, so it’s 100% worth it. Once you get the chicken and potatoes dressed and into the oven, you’re going to be taking them out every 20 minutes to stir them and then putting them back in. This is to ensure that they all get cooked evenly and the potatoes get nice and brown.
While I’m waiting for the next 20 minutes to pass, I’m using that time to cook and chop the bacon, shred the cheddar cheese and chop the scallions. You will probably have some time in there to relax. I’ve mentioned before that I found the easiest way to shred cheese is in a food processor. It takes just a couple of minutes.
Now, for toppings you have a couple of options. We like to put scallions and ranch dressing on our cheesy barbecue chicken and loaded potato casserole, but it would taste just as delicious with sour cream! You want to drizzle either on top in a way that for every spoonful, each person is getting the chicken, potatoes, bacon, cheese, scallions and ranch or sour cream.
While this cheesy barbecue chicken and loaded potato casserole is all you need for your meal, you can also serve with a side of broccoli if you want some greens. Description
This cheesy barbecue chicken and loaded potato casserole combines all of your favorite flavors into one simple meal.
Ingredients
- 1 lb boneless chicken breast, cubed
- 8 red potatoes, cubed
- 1/4 cup olive oil
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 1 cup barbecue sauce
- 2 cups cheddar cheese, shredded
- 1 lb bacon, chopped
- Scallions, diced for topping
- Ranch or Sour Cream
Instructions
- Preheat oven to 400 degrees.
- Spray a 9×13 baking dish with cooking spray/oil.
- Combine potatoes, chicken, olive oil, salt and pepper into a large bowl and toss to coat.
- Add barbecue sauce and again, toss to coat.
- Transfer your mixture to your baking dish and bake (uncovered) for 20 minutes.
- Meanwhile, fry your bacon until crisp, remove and drain. When they are cool enough, chop into bite sized pieces.
- Remove from oven, stir and cook for another 20 minutes.
- Shred cheddar cheese and chop scallions and set aside.
- Remove from oven, stir and cook for another 20 minutes.
- Remove from oven. You want the potatoes to be browned. If they aren’t, put back into the oven for an additional 10 minutes.
- Top your chicken and potatoes with bacon and cheese and return to the oven for 5 minutes, or until cheese is completely melted.
- Top with scallions and drizzle ranch or sour cream on top.
- Prep Time: 15 min
- Cook Time: 65 min
