There is nothing better than a stack of pancakes topped with maple syrup in the morning, is there?! Yum! Over the years, we’ve made a lot of pancakes with that boxed mix you get in the store. But I realized that it’s not only cheaper to make your own, but they also taste way better when you make the mix yourself. Hopefully last month, you were able to check out our pancake mix recipe. Now it’s time to talk about how to turn that homemade pancake mix, into fluffy pancakes!

Making your own fluffy pancakes from scratch is way easier than you think. I tend to make a fresh batch of pancake mix every 3-4 weeks so it’s always ready for our weekend pancake breakfasts. Similar to the boxed mix, you only need to add eggs, milk, vanilla and butter. And you’ll know exactly what’s in them and don’t have to worry about any funny ingredients that you can’t pronounce and have to google to make sure it’s safe to give to your family (don’t you just hate those strange ingredients?).

These delicious homemade fluffy pancakes are super easy to make and they are a family favorite!

 

For this recipe, I use whole milk. If you prefer buttermilk, you can use that as well! It does give the pancakes a totally different flavor so it’s a matter of preference. If you are unable to drink milk, you can also substitute it for almond milk or any other milk substitute without any issues. I’ve made these with almond milk a few times and they are just as yummy.

You can make these pancakes in a regular pan on the stove. We had a griddle for years that recently died on us but a couple of weeks ago, I found the most incredible electric griddle. It’s extra large and super light and thin – so it stores nicely. It’s easy to clean, has a no mess drip tray and comes in a variety of colors to match just about anyone’s kitchen. We’ve made pancakes, eggs and quesadillas on it already. I love it!

Fluffy pancakes have never been easier. Just use our pancake mix recipe, add a few ingredients and you have a the perfect family breakfast.

What I love about pancakes the most is that you can make them your own. Love chocolate chips or blueberries? Add those to the batter. Love them topped with maple syrup and powdered sugar, go for it. You can top with fresh berries or whipped cream. Love french toast? Put in a pinch of cinnamon and nutmeg and you have french toast pancakes! 

Want to go all out? Add a very ripe banana and walnuts to the batter and you have banana bread walnuts. YUM! You can even make a fun face out of fruit and whipped cream like they do in the restaurants. 

The possibilities are endless for these yummy, fluffy pancakes!

Easy Fluffy Pancakes

Description

Fluffy homemade pancakes have never been easier. Just take our pancake mix, add a few ingredients and voila!


Ingredients

Scale
  • 2 cups pancake mix
  • 2 large eggs
  • 1 3/4 cups milk
  • 2 tsp vanilla extract
  • 2 tbsp melted butter


Instructions

  • Preheat your griddle or pan over medium-high heat. You should use oil, butter or spray to grease it lightly if it’s not a non-stick pan.
  • Combine all ingredients in a bowl and whisk until smooth.
  • Using a ladle or measuring cup, pour approximately 1/3 cup batter onto your griddle or pan. When bubbles start to pop on the top, flip and let sit for 4-5 minutes (or until golden brown). If you find they are starting to burn, turn the heat down a bit.
  • Serve warm and top with syrup, powdered sugar, fresh fruit or whipped cream.

Notes

You can also add blueberries or chocolate chips to the batter if you’d like!
