If your family loves sushi but you don’t always have the budget for restaurant-made sushi, I have an easy and super yummy dish for you to try! This easy sushi bake combines all of our favorite sushi flavors in one dish. The best part is, you don’t have to roll it!
What makes this easy? Well, we buy frozen sticky rice which is ready in just five minutes in the microwave. You can make your own, but we find that using store-bought is fast and ensures that it always comes out perfectly.
When my family is craving sushi, instead of spending nearly $100 at our local sushi restaurant, I make this easy sushi bake for around $20. It’s become one of my family’s most requested dishes.
What size baking dish should I use?
I have made this easy sushi bake in a variety of sized baking dishes. If you use a more narrow dish, the rice layer will be thicker. If you use a larger dish, it will be thinner. I used a rectangle baking dish for the purpose of shooting the photos for this recipe.
What if I can’t find the large seaweed sheets?
Our local grocery store sells a package of nori (seaweed sheets) that are the perfect size for this sushi bake. They also sell them on Amazon. If you are unable to find them, you can buy the individual packages and line up the smaller squares to cover the rice.
Any important tips to share?
If I can give you one tip, it’s not to chop the avocado until right before you are ready to serve it. Avocados brown fairly quickly, so in order to make it look as fresh as possible, hold off as long as you can.
Had to share a funny story about this easy sushi bake. I actually made it a number of times before I decided to take photos of it to share. Every single time, it tasted delicious but looked horrible. No matter what I did, it would fall apart as soon as I sliced it into individual pieces.
On the day I decided to take photos, I was standing in my kitchen, talking to my 16-year-old and trying to figure out how I was going to cut it without making it look awful (because while it doesn’t matter what it looks like when I make it for my family, I wanted to make sure that it looked good in photos for you.
I’m throwing out all of these random ideas when my daughter asked me why I don’t just use parchment paper like I do when I make fudge or brownies. That way, I can use the parchment paper to pull the sushi bake out of the pan in one piece.
I couldn’t believe that I hadn’t thought of that. I spent the next ten minutes, walking around the house and thanking the lord that he gave me such a smart child. She just stood in the kitchen and shook her head. But she saved the day. So thank you, Lucia.

- Cook the frozen sticky rice according to the box. Preheat the oven to 450º.
- Line a baking dish with parchment paper. Place the rice in the baking dish and flatten it so it’s leveled.
- Add one sheet of nori to the top.
- In a large bowl, mix the rest of the ingredients (except the topping ingredients).
- Add the mixture on top of the nori and flatten it so it’s leveled.
- Bake for 20 minutes. Remove from the oven and allow to cool for 15-20 minutes.
- Add a column of cucumbers.
- Add a column of imitation crab.
- Chop the avocado and add a column of chopped avocado.
- Sprinkle chopped seaweed on top.

Ingredients
- 1 package of frozen Sticky Rice
- 2 sheets of nori (sushi seaweed)
- 8oz imitation crab meat, chopped
- ¾ cup English cucumber, chopped
- 1/4 cup mayo
- 1/4 cup cream cheese, softened
- 1 tbsp black sesame seeds
- 1 tsp salt
Topping:
- 1 Haas avocado
- ¼ cup cucumber, chopped
- ¼ cup imitation crab, chopped
- 1 sheet nori, chopped
- Soy sauce for dipping
Instructions
- Cook the frozen sticky rice according to the box. Preheat the oven to 450º.
- Line a baking dish with parchment paper. Place the rice in the baking dish and flatten it so it’s leveled.
- Add one sheet of nori to the top.
- In a large bowl, mix the rest of the ingredients (except the topping ingredients).
- Add the mixture on top of the nori and flatten it so it’s leveled.
- Bake for 20 minutes.
- Remove from the oven and allow to cool for 15-20 minutes.
- Add a column of cucumbers and a column of imitation crab. Chop the avocado and add a column of chopped avocado.
- Sprinkle chopped seaweed on top.
- Using the parchment paper, pull the sushi bake and place it on a flat surface.
- Slice into pieces and serve with soy sauce for dipping.
