There’s something about a good, homemade stuffing (or dressing as some call it) that makes the whole Thanksgiving meal that much better. I have tried a number of different types of stuffing in my years, but I always found them to be very soggy and while many love it that way, I’m just not a fan of the mush. Once we had kids and I started wanting to cook entire thanksgiving feasts by myself, I realized that without the perfect stuffing recipe, my feast was going to be more of a flop. Apparently, it’s my birthday 🎂 … Isn’t it funny how as you get older, your birthday gets less and less exciting? I used to do a countdown, like a month in advance. I would remind everyone I saw. It was ridiculous. Now, if it wasn’t for the 3049823048 notifications that I get from FB, from all of the people that I haven’t heard from since last year, I might not even remember it’s my birthday at all. While I do talk about it in DMs when people reach out, it occurred to me that many of you are unaware of my other blog, @thesuperblogcoach. The story behind it is that I had a couple of incredible women who taught me what I needed to know to become a successful blogger and influencer so I could support my family through this fun career. Once upon a time there was a rich man that was driving past a farm, he looked over and saw a beautiful stallion standing in the field. The rich man thought, ‘Wow I gotta have him’ so he pulled into the farm’s entrance. He found the owner and said, “I want that horse out yonder in that field. How much do you want for him?” The farmer said, “He don’t look to good.” “Nonsense” said the rich man “I’ll pay you $1000 for him.” “But he don’t look to good,” said the farmer. One thing I regret is not having newborn photos taken of all three girls. I’ve looked back at Falynn’s photos so many times over the years and they still give me all the feels. We were so blessed to have been able to have them taken by @jenpriesterphotography. Jen is so talented and really the sweetest person. I am forever grateful that she made the trip from Michigan to Florida to capture these for us. Did you have professional newborn pictures taken of your kids?

One thing I regret is...

Let’s talk about photo editing. There are so many people on IG that I admire, when it comes to their editing and photography styles… @theautismcafe, @momsinknots, @taramoon and @dearauggie, just to name a few. I’m constantly trying to learn, grow and improve my photos. So I thought it would be fun to take an older photo and edit it again, just to see the changes in my own personal style. Halloween is over, so we can start talking about Christmas now, right?! 🙌🏻 The holidays are usually a blur for me. Between decorating, cooking and prepping the house, its non-stop. It’s hard not to feel overwhelmed when you add in our everyday chores as parents. I think it’s important to keep the kids occupied with something that you can use, instead of sitting them in front of a screen. Plus, it’s great to encourage your little one’s creativity. We love to choose a few projects every year and have the girls create our holiday décor. They love that we proudly display their projects and they make a great gift for your guests or their school friends! This year, we are excited to share our first Christmas craft idea, the snowman jar! What do you think?

Easy Vegan Granola Recipe

We are constantly looking for yummy, good-for-you snacks.  Our family recently discovered that we all really love granola! I mean, what’s not to love?  Oats, nuts, dried fruits, maple syrup, all baked until it’s toasted and golden brown.  Drooling yet?  While store-bought granola is good, there is nothing quite like homemade granola.  I’m excited to share this vegan granola recipe that is not only delicious, but so easy to make!

A Versatile Snack

Granola makes a great breakfast or snack and is great on yogurt, smoothie bowls, with fruit, on ice cream, with almond milk or even on its own!  Since we made our first batch this week, we have been trying it in every way we can think of.  It’s interesting to see how we all eat it differently. My 12-year-old prefers to eat it straight out of a bowl, on its own.  My 8-year-old eats it like cereal with some almond milk.  My 5-year-old eats it with strawberries, for breakfast.  My husband loves it on top of dairy free yogurt with berries.  I personally love it on smoothie bowls (which by the way is the next recipe I will be sharing this week, so stay tuned!) I love that we can make a big batch and enjoy it in so many different ways!

You can add raisins or other dried fruits, brown sugar, different types of nuts (almonds or walnuts maybe)… the possibilities are endless. We’ve even thrown some in a little container to take with us. It’s a great on the go snack!  The best part is, it only takes 5 minutes to prep with my easy-read measuring cup set, small mix ‘n scraper, stainless steel whisk and my other awesome new Pampered Chef kitchen tools!

Easy Vegan Granola Recipe

Oats, nuts, dried fruits, maple syrup, all baked until it’s toasted and golden brown.  Drooling yet? 
Course: Breakfast, Snack
Keyword: granola, vegan

Ingredients

  • 3 cups old fashioned oats
  • 1 cup pecans chopped
  • ½ cup shredded coconut unsweetened
  • 1 tsp cinnamon
  • ¾ cup coconut oil melted
  • ½ cup maple syrup
  • 1 tsp vanilla extract
  • ½ tsp salt

Instructions

  • Preheat oven to 300 degrees.
  • Mix together oats, pecans, coconut, cinnamon and salt.
  • In separate bowl, whisk together coconut oil, maple syrup and vanilla.
  • Pour the coconut oil mix over the oat mix and stir until combined.
  • Spread mixture evenly onto a baking sheet in a thin layer.
  • Bake for 20 minutes.
  • Remove from oven, stir and spread evenly in a thin layer.
  • Bake for another 20 minutes.
  • Remove from oven and let cool completely.

    This is a great recipe. However, I have never try to make them. We always buy our granola cereal, and we love to eat it with berries and yogurt as well as your husband. This is our preferences, and we love that way. Nevertheless, there are always different ideas to try something new.
