We’ve always been an ice cream cake family. Every single occassion, I ask what type of cake they want and every single time they shout “ICE CREAM CAKE!”. So this year, for Super Dad’s birthday, I thought it would be fun to create an ice cream sundae cake.
There were a number of ways I could have achieved this but decided to go with easy because my time is valuable these days and I’m too tired for anything that takes too long. So we grabbed some ice cream sandwiches from the grocery store and some of our favorite ice cream sundae toppings.
I have to admit, our ice cream sundae cake turned out better than we thought! We packed all of the flavor of a traditional ice cream sunday into one piece of ice cream cake.
I do want to give you a few tips. Leave the ice cream sandwiches in the freezer for as long as possible. I unwrapped four at a time. I put the plate and what I had already created, in the freezer while I unwrapped the next four. After the whipped cream and toppings, I would put everything back in the freezer for 10-15 minutes, just to make sure it didn’t melt on me.
If you are unable to find chopped peanuts, you can buy regular peanuts and pulse them a bit in the food processor. Just don’t leave them in too long or they will be more like crumbs (which is what happened to mine). You can still taste them, but it lacks the crunch element if they are too broken down.
If you are an OREO cookie lover, like we are, you can also make this with OREO ice cream sandwiches, though since they are round, you’ll have to cut the edges so that they are straight and can line up next to one another. I’m going to try it this way for my birthday in November.
The best part about this ice cream sundae cake is that you can play around with the toppings. Don’t like caramel? Leave it out! Are you a fan of butterscotch? Add that in! Make the cake whatever you want to make it!
We chose peanuts, sprinkles, chocolate syrup, caramel sauce and cherries. The only change I would make next time is use different ice cream flavored sandwiches. I thought they existed but haven’t been able to find them.
No matter what toppings you chose, I can tell you that this ice cream sundae cake will be a hit with your family and your guests!

Step 1: Unwrap four ice cream sandwiches and lay them side by side on a plate.
Step 2: Cover the top with a layer of whipped cream or thawed whipped topping.
Step 3: Sprinkle peanuts and sprinkles and drizzle chocolate syrup and caramel.
Step 4: Unwrap four more ice cream sandwiches and lay them side by side on top of the stack you just created.
Step 5: Cover the top with a layer of whipped cream or thawed whipped topping.
Step 6: Sprinkle peanuts and sprinkles and drizzle chocolate syrup and caramel.
Step 7: Unwrap four more ice cream sandwiches and lay them side by side on top of the stack you just created.
Step 8: Cover the top and sides with a layer of whipped cream or thawed whipped topping.
Step 9: Sprinkle peanuts and sprinkles and drizzle chocolate syrup and caramel. Top with a cherry. Freeze until you’re ready to serve and then slice and enjoy.

Want to celebrate a special occassion and love ice cream cake?! This easy ice cream sundae cake is made with ice cream sandwiches and all of your favorite sundae toppings.
Ingredients
- 12 ice cream sandwiches
- 16oz whipped topping, thawed
- 1/4 cup peanuts, chopped
- sprinkles
- chocolate syrup
- caramel sauce
- maraschino cherries
Instructions
- Unwrap and place four ice cream sandwiches side by side, on a plate or flat surface that is small enough to fit in your freezer.
- Top with a thin layer of whipped topping, making sure to level it.
- Drizzle chocolate syrup, caramel sauce and sprinkle with peanuts and sprinkles.
- Unwrap and place four additional ice cream sandwiches side by side, on top of the whipped cream and toppings.
- Top with a thin layer of whipped topping, making sure to level it.
- Drizzle chocolate syrup, caramel sauce and sprinkle with peanuts and sprinkles.
- Unwrap and place four additional ice cream sandwiches side by side, on top of the whipped cream and toppings.
- Top with a thin layer of whipped topping on top and on the sides, completely covering the ice cream sandwiches.
- Drizzle chocolate syrup, caramel sauce and sprinkle with peanuts and sprinkles. Add a cherry on top.
- Place in the freezer for at least one hour or until you are ready to serve.
- Slice and enjoy!
