Remember the St. Patrick’s Day brownies that I shared? Well, I finally got around to making them again minus the green food coloring. These mint brownies are a must try (and they don’t look like moss like I was told the others do). This is one of those recipes that once you make it, it’ll be in your regular rotation.
These brownies are moist and chewy on the inside and contain the perfect amount of mint and chocolate. I’ve made them so many times over the past month that I think we can officially call these my family’s favorite brownies. We find that they are best warm. So you can warm them up in the microwave for 20-30 seconds and serve them with a tall glass of cold milk. They are so delicious!
Before I share the recipe, let me answer some questions that may come up.
Where do I find mint fudge baking chips?
You can find the mint fudge baking chips that I used at Walmart. If you are unable to find those, they sell a number of other brands. You can also use Andes mints and chop them up.
What is the easiest way to melt butter?
I put a stick of unsalted butter in a microwave safe bowl and microwave in 20 second increments. When the butter is almost completely melted, remove the bowl from the microwave and stir until it’s fully melted. I do this first so that by the time I get all of the other ingredients together, it will be cooled down enough.
Can I add extra chocolate chips?
I’ve tried to double the amount and it was a disaster. The brownies became very oily and the batter was drowned out by the chips. I don’t recommend adding anymore than is in the recipe for these reasons. 1/2 a cup of each seems to be the perfect amount.
What is the easiest way to cut these mint brownies?
While you can use just a regular knife, I use a large pastry dough cutter. The large size is the perfect size to cut your brownies in one shot and it easily sliced through. I use it all the time for both brownies and fudge. If you make bread, it can also be used for dough.
What I love most about these mint brownies is that you don’t need any fancy equipment. The recipe is so easy to make that it’s a fun recipe to work on with your kids. They remind me of Girl Scout thin mint cookies. Speaking of, I would love to crush some up and add them next time we make them. I’ll let you know how that turns out.

- Add both eggs.
- Whisk for two full minutes.
- Add the vanilla.
- Stir until fully combined.

- Pour the brownie batter into the pan and tap on the counter until leveled.
- Bake at 350º for 25 minutes. Remove from the oven, allow to cool, and cut into even pieces.

Ingredients
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 eggs, room temperature
- 2 tsp vanilla extract
- 3/4 cup all-purpose flour
- 3 TBSP unsweetened cocoa
- 1/2 tsp iodized salt
- 1/2 cup milk chocolate chips
- 1/2 cup mint fudge baking chips (or chopped Andes mints)
Instructions
- Melt butter in a small bowl in the microwave in 20-second increments. Set aside.
- Preheat the oven to 350º and line an 8×8 baking pan with parchment paper, leaving parchment along the sides of the pan. This will help you to remove the brownies easily.
- In a large bowl, combine the sugar and melted butter and whisk until smooth.
- Add eggs and whisk for two full minutes.
- Add vanilla and stir until fully combined.
- Add flour, cocoa powder, and salt and mix until fully combined.
- Add mint and chocolate chips and stir until evenly distributed.
- Pour the brownie batter into the pan and tap on the counter until leveled.
- Bake for 25 minutes and then allow to cool for 15 minutes.
- Remove the brownies from the pan by pulling up the two longer sides of parchment paper. Place the brownies on a cooling rack.
- Cut the brownies into 9 equal pieces.
- Prep Time: 10 minutes
- Cook Time: 25 minutes
