If you love Mediterranean food, this slow cooker Mediterranean chicken recipe is a must! It’s quite literally the best slow cooker chicken I’ve ever tasted (and my family agrees). It’s packed with flavor and is incredibly easy to prep and cook slowly in your crock pot while you do everything you need to get done during the day.
I fell in love with Mediterranean food years ago and have been on a mission to find ways to bring the flavors into our dinners more and more.
There is so much to love about this slow cooker Mediterranean chicken. If you are a fan of kalamata olives, roasted red peppers, and capers, you are going to love this recipe. The chicken is so flavorful and falls apart as soon as the fork touches it. You can add artichoke hearts and top with feta cheese if you want.
Let me share a few tips before sharing our slow Meditteranean chicken recipe.
There are so many great slow cookers on the market. I have the Crock-Pot 7qt Programmable Cook & Carry Slow Cooker. It’s large enough to fit our family meals and is easy to operate! We’ve had two of them over the years, and I only had to replace one because I dropped it (oops).
I recommend using skinless and boneless chicken thighs. You can also use chicken breasts if you’re not a fan of chicken thighs. I have used both and have found that chicken thighs are much more flavorful and less dry. So if you decide to use chicken breasts, you may want to cut them so that the flavor can soak in.
I recently discovered slow cooker liners and can’t recommend them more. I can use my slow cooker every day now without having to spend forever trying to clean it out after each meal!
While this slow cooker Mediterranean chicken tastes good with many sides, our family loves to make rice pilaf and cucumber, tomato, and feta salad.
The one thing I’ve purchased this year that I can’t recommend enough is this vegetable chopper. I can chop the cucumbers and tomatoes in just a couple of minutes. I add Greek dressing and feta cheese and toss. I can never make enough. My entire family loves it.
I’ve tried to show you the steps in the photos above to make it a bit easier to make this slow cooker Mediterranean chicken.
- Season the chicken with salt and pepper and brown for 2-3 minutes on both sides.
- Add onions, kalamata olives, red peppers, capers, and chicken broth to the slow cooker.
- Add the browned chicken on top.
- Whisk together lemon juice, Italian seasoning, and minced garlic.
- Pour the lemon juice, Italian seasoning, and minced garlic on the chicken. Cook on low for 4 hours.
- Halfway through the cook, flip the chicken onto the other side. Serve with orzo or rice pilaf and a cucumber, tomato, and feta salad.

Description
This Mediterranean chicken dish is made in your slow cooker with roasted red peppers, kalamata olives, onions, and capers. It’s packed with flavor and only takes minutes to prep.
Ingredients
- 6–9 boneless/skinless chicken thighs
- 2 tbsp olive oil
- salt & ground black pepper
- 1 onion, sliced
- 1/3 cup kalamata olives, sliced
- 8oz roasted red peppers
- 2 tbsp capers
- juice from 1/2 lemon
- 3 tsp Italian seasoning
- 1 tbsp garlic, minced
- 1/4 cup low sodium chicken broth
- feta cheese (optional topping)
Instructions
- Pat dry the chicken and season with salt and pepper.
- Heat olive oil in a pan on medium-high heat
- Brown the chicken for 2-3 minutes on each side
- Add onions, kalamata olives, red peppers, capers, and chicken broth to the slow cooker.
- Place the browned chicken in the slow cooker.
- Whisk lemon juice, garlic, and seasoning and pour on top of the chicken.
- Cover and cook for at least 4 hours on low.
