We’ve been trying to make better decisions when it comes to dessert options in our house. Strawberries and whipped cream are requested pretty often. So this year, for Valentine’s Day, I thought it would be fun to make strawberry shortcake.

The plan was to bake a square or rectangle pound cake and fill it with strawberries and whipped cream, but then while shopping online, I found this adorable heart-shaped baking tin and I knew individual, heart-shaped cakes would be so much more of a hit!

Nothing says I love you more than an individual, heart-shaped strawberry shortcake.

If you are using the same heart tin I did, you’ll want to fill the batter no more than 3/4 full. The cakes will rise just a bit, possibly to a point, so you may need to slice the bottom off so that they are nice and even. 

If you decide to make one large cake, you can use a 9×5 baking pan and you will need to bake it longer (I’d say somewhere around 40 minutes). I’d recommend letting it bake for 30-35 minutes and then check it with a toothpick. If you stick it in the center and it comes out clean, it’s ready to come out of the oven.

If the toothpick doesn’t come out clean, let it bake for another few minutes. You want the cakes to be a nice golden color.

It’s very important to let the cakes cool completely so that the whipped cream doesn’t melt. I allow them to cool in the pan for 5-10 minutes and then transfer them to a cooling rack until they are completely cool.

At that point, use a sharp knife to slice your cake, horizontally into two equal halves (or as equal as you can get it). Make a note which is the decorative side. That will be the top of your cake, so make sure not to start layering on that side.

You can layer your strawberry shortcake however you’d like. I tried a few different ways and was most successful with strawberries, whipped cream, and then the second layer of strawberries.

For the topping, I chose to cut one of the strawberry slices into the shape of a heart and set it on top. But you can do so many fun things with the top.

Add another layer of whipped cream and more strawberries or some decorative sprinkles.  It’s up to you! No matter how you decorate your strawberry shortcake, it’s sure to be a hit with your Valentine!

Description

Fresh strawberries and whipped cream, sandwiched between two layers of pound cake.


Ingredients

Scale
  • butter or cooking spray
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 4 large eggs, room temperature
  • 1/2 cup sour cream or greek yogurt
  • 2 tbsp vanilla extract
  • whipped cream
  • fresh strawberries, sliced


Instructions

  • Grease the baking pan and preheat the oven to 350˚
  • Whisk together the flour, baking powder, and salt in a medium-sized bowl.
  • Cream the butter with an electric mixer or stand mixer.
  • Add sugar and mix on medium speed until light and fluffy.
  • Add one egg at a time and continue mixing at medium speed, until completely combined.
  • Add sour cream/greek yogurt and vanilla and mix until completely combined.
  • Slowly add the flour mixture in and continue mixing on medium speed until completely combined.
  • Fill your baking pan 3/4 of the way with batter and tap gently on the counter until completely even.
  • Bake for 20-25 min or until a toothpick can be inserted in the center and come out clean.
  • Let cool for 5 minutes before removing from the pan and onto a cooling rack, where you’ll want them to fully cool.
  • Slice each cake in half, horizontally.
  • Top the bottom piece with a layer of strawberries, whipped cream, and the second layer of strawberries.
  • Place the other piece of cake on top and top with whipped cream, strawberries, or sprinkles.
  • Prep Time: 15 min
  • Cook Time: 25 min
