Remember that story I posted the other day, showing you guys the homemade ice cream and asked you to guess the flavor? It’s finally time to reveal the big secret! Sunday is National Ice Cream Day, so we wanted to come up with an extra special recipe. We decided that creating an ice cream pie, inspired by a candy bar, would be a fun idea. And while our family has MANY different "favorite" candy bars, as soon as I mentioned this one, they were all in! The combination of toasted coconut and toasted almond ice cream, with chocolate ganache, on a chocolate pie crust and topped with shredded coconut and almonds, sounded so good, they made me go to the store immediately to pick up all of the ingredients. In honor of Thank-o-Rama, Falynn was sent the newest Elephant & Piggie Like Reading! book, Harold & Hog Pretend for Real! along with some fun goodies including sidewalk chalk, chalkboard contact paper and paper photo props.

Her assignment? Use the chalk to write down everything she’s thankful for.

Falynn’s mind immediately went to work. I was expecting a list of things like applesauce, wi-fi and surprise eggs, but she completely shocked and pleased me with her answers. I couldn’t be more proud. At the top of her list, Mo Willems, her favorite author of all time. In addition, things like “responsibilities, my life and sunsets”. Melt. I really lucked out with this one.

    Oh my…this really warmed my heart. She’s got such a sweet soul – you must be an amazing mother. I love that she’s thankful for something as concrete and practical as “responsibilities” but also something as whimsical as “sunsets.” It sounds like she’s very well-balanced. And those readers sound amazing. Starting that love of reading off early is so important and these kinds of readers are great at encouraging kids with challenging yet attainable reading goals.
