I’ve been a fan of artichokes since I was a kid (thanks, Mom). I’ve tried a million times to try to get my kids to try them, but I’ve had no luck. Until I made these air fryer artichoke hearts with garlic aioli. Now they can’t get enough!
These air fryer artichoke hearts are so good and incredibly easy to make. All you need is an air fryer and 30 minutes.
In addition to being a fat-free, low-sodium food, artichokes are also rich in key nutrients, including potassium, fiber, vitamin k, magnesium and folate. They are are believed to contain antioxidants.
You’ll want to buy the canned quartered artichoke hearts in water. If they don’t have quartered, you can buy whole, but you might want to quarter them yourself. I typically buy 3-4 cans to make for our family of five and there are never leftovers.
I find that shredded parmesan or shaved parmesan works best for this recipe. The parmesan cheese is going to melt in the air fryer, so whichever you use should be fine!
You can purchase Italian seasoning in the spice aisle of your local grocery store. If you are unable to find it, you can also make your own using thyme, basil, rosemary and oregano. I like to make mine in batches and store it with my other spices.
The garlic aioli dip is optional, but really compliments the air frier artichoke hearts. The combination is tangy and delicious. Just like a good potato chip, you won’t be able to eat just one.

Air Fryers are a great way to make your favorite fried foods in a much healthier way since they aren’t frying in a pan full of oil. While not super healthy, one of our favorite air fryer treats are air fried oreos. A good air fryer can save you time and cleanup is super easy.

I have the smaller one in red as well. They are gorgeous, lightweight serving bowls and a must have if you love your serving dishes to be as beautiful as the food you put on them.
The steps in the photos above, show exactly how I make my air fryer artichoke hearts.
Step 1: Drain the quartered artichoke hearts, pat dry and place into a medium bowl.
Step 2: Mix all remaining ingredients until fully combined.
Step 3: Place the artichoke hearts into your air fryer basket and cook for 5 minute intervals, shaking in between, until the edges are brown and crispy.

Description
Air fryer artichoke hearts are a quick and easy appetizer. Served with a lemony garlic aioli, this will be a hit for any occassion.
Ingredients
Air Fryer Artichokes
- (2) 14oz cans of quartered artichoke hearts in water
- 2 tbsp olive oil
- 2 tbsp shredded parmesan cheese
- 1/2 tsp Italian seasoning
- 1/2 tsp kosher salt
- 1/4 tsp lemon pepper
- 1/4 tsp garlic powder
Garlic Aioli
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
Instructions
Garlic Aioli
- Place all ingredients into a small bowl and mix until combined.
- Cover and refrigerate for 20-30 minutes.
Air Fryer Artichokes
- Preheat your air fryer to 390º.
- Drain artichoke hearts and pat dry.
- Place all ingredients, including the artichoke hearts into a medium bowl and toss to coat.
- Place your artichokes into the air fryer basket and cook for 5 minutes.
- Shake basket in order to move the artichoke hearts around a bit and cook for an additional 5 minutes.
- Repeat the last step until the artichoke heart edges are slightly brown and crispy.
- Serve with chilled garlic aioli sauce.
- Prep Time: 5 minutes
- Cook Time: 15 minutes
