If you are running short on time and need a quick and delicious treat for Easter, you’ve found the perfect recipe! Since we use the store-bought sugar cookie mix, you save time and money on additional ingredients that you may not have in your pantry already.


Can I use any type of chocolate chip cookie mix?
Absolutely! We chose Betty Crocker sugar cookie mix because it’s inexpensive and tastes great. If you choose another brand, just make sure that you use whatever the package requires (vs. egg and butter) and adjust the baking temperature and time according to that package. The rest of the recipe will stay the same.
What is the easiest way to soften butter?
I leave mine out of the refrigerator for about 30 minutes. If you are short on time, you can put it in the microwave (with the paper wrapping) for 15-20 seconds and smush it a bit with your hands. It’s usually perfectly softened that way.


What size scoop do I need for these easy Easter cookies?
You are going to want to find a medium-sized scoop for these easy Easter cookies. If you don’t mind the cookies being on the smaller size, you can use a smaller scoop. Alternatively, if you’d like them to be giant like our easy St. Patrick’s Day cookies, you can use a jumbo-sized scoop.
Is there an easy way to break the Cadbury mini eggs?
I actually have a funny story about this. We started out by putting the Cadbury mini eggs in a large ziplock bag. We hit the mini eggs with one of my ice cream scoops. I noticed after the third or fourth smack, that the scoop felt a little wobbly. Turns out I had broken my Rae Dunn ice cream scoop. Oops! It’s ceramic and couldn’t take the hit. So, we switched to a hammer which worked perfectly. Just one hard hit to each mini egg and it’s cracked.

- Add sugar cookie mix, egg and butter to a large bowl.
- Mix until dough forms.
- Add crushed mini eggs, leaving some behind for topping.
- Stir until mini eggs are evenly distributed.
- Using a medium sized scoop, scoop dough onto parchment lined baking sheet, leaving space for them to spread.
- Press down each scoop of dough with your hands or the bottom of a cup so that they are flattened a bit.
- Top with additional crushed mini eggs and bake at 350º for 17 minutes.

Ingredients
- Betty Crocker sugar cookie mix
- 1 stick unsalted butter, softened
- 1 beaten egg
- 9oz bag of Cadbury mini eggs, crushed and separated
Instructions
- Preheat the oven to 350º and line a large baking sheet with parchment paper.
- Add sugar cookie mix, egg, and butter to a large bowl and mix until dough forms.
- Add crushed mini eggs, leaving some behind for topping.
- Stir until mini eggs are evenly distributed.
- Using a medium-sized scoop, scoop dough onto a parchment-lined baking sheet, leaving space for them to spread.
- Press down each scoop of dough with your hands or the bottom of a cup so that they are flattened a bit.
- Top with additional crushed mini eggs and bake at 350º for 17 minutes.
- Allow to cool for 5 minutes and move to a cooling rack to finish cooling.
- Prep Time: 7 minutes
- Cook Time: 17 minutes
