From what I remember, my after-school options were matzah with butter, macaroons, or a variety of Kosher for Passover candies that I was required to sell (and wound up eating a lot) throughout my years of private school. The first time I made these, my family devoured them in minutes. When I told them I had to make them again so that I could photograph them, they were beyond thrilled.
The best way to describe these Kosher for Passover double chocolate chip cookies is crispy on the bottom but chewy in the center. They resemble a brownie in many ways, and since eating brownies on Passover was my dream as a kid, I’d call it a win.
Can I use any cocoa?
When cooking for Passover, you have to be sure that all of the ingredients you are using are also Kosher for Passover. I’ve had to google several ingredients to be sure. From what I’ve researched, pure cocoa powder does not need certification during the year or for Pesach.
I use organic, dutch-process cocoa powder, which gives your cookies a rich chocolatey, amazing taste.
Can I use any chocolate chips?
Again, you’ll want to ensure the chocolate chips are also Kosher for Passover. It will often be listed directly on the package, but other times, you can easily use Google and find out.
I find that mini, semi-sweet chocolate chips work best, but you can also use regular-sized chocolate chips.
Is the cookie batter supposed to be sticky?
Yes, it absolutely will be. Your batter should be similar to a brownie batter but stickier. You are on the right track if you have to work to whisk it.
do I need any special kitchen tools?
Since the batter should be spread out on the cookie sheet, you’ll either need to bake them in batches or you can purchase a larger baking sheet.
This Passover double chocolate chip cookie recipe calls for egg whites, so you must separate the yolk from the whites. You can do this with your hands or an egg separator (one of my most used kitchen tools).
You can use a tablespoon to drop the cookie batter on the cookie sheet, but a small scoop makes things easier and ensures that your cookies are uniform.
These gluten-free, Kosher for Passover double chocolate chip cookies are so good that you’ll want to make them even when it’s not Passover. They also make a great gift idea! Pack a dozen in a container, put a bow on it, and bring it to the Passover seder! I’m sure your hosts will love it.
These cookies are great for kids, but I can tell you from experience that the adults in our home love them too! They are chewy and combine the best of a brownie and a cookie.
