The Perfect S’mores Fudge Bars

Before I get to this incredibly yummy and easy recipe for S’mores Fudge Bars, I have a little story to share. You can’t be that surprised. By now, you know how food bloggers operate (lol). And in case you don’t know, our job is to tell stories.

I was working on a sponsored campaign for a brand that we have worked with a bunch of times and really and truly love and purchase regularly (even when we aren’t working with them). The assignment was to create a snack or treat for Father’s Day.

I’m not sure why, but my mind immediately went to s’mores. They are the ultimate summer treat and something that our grocery store literally has an entire display for all summer long.

My idea was to create some s’mores fudge, put it in a little baggy, and offer a cute little printable for you guys to be able to recreate on your own. Everything was going perfectly until I made the fudge recipe I had planned out.

If you want to know if a recipe is really and truly delicious, give it to one of your kids. If they aren’t brutally honest with you if they don’t like something, their actions will let you know for sure whether or not it’s something worth sharing with others. 

Originally, I crushed the graham crackers by hand and had small pieces on the bottom and the top of the fudge. After hours of waiting for it to set, I cut up the s’mores fudge and immediately noticed that the graham crackers fell off. Fail #1.

The marshmallows weren’t toasted. I just threw them in as-is. So that toasted marshmallow taste in s’mores was seriously lacking. Fail #2.

I gave a piece to my 8 and 12-year-olds and asked them to taste it. My 8-year-old took one bite and then went back to what she was doing. She said it was good but she was “too full”. Too full for s’mores? Too full for chocolate? 

My 12-year-old took a bite and then said she was saving the rest for later. After asking a few times for her to be totally honest, she said there was way too much fudge and it was way too sweet. I made the fudge in 5 layers the first time. Graham crackers, fudge, marshmallows, fudge, and graham crackers. Fail #3.

I knew at this point that I couldn’t possibly share the recipe with anyone if my own kids thought it was too sweet. So I spent that evening thinking about all of the ways my s’mores fudge bars recipe had gone wrong and came up with a better plan.

I decided instead of fudge, I was going to turn these into bars. That way, I could guarantee that the graham cracker crust would not fall off of the fudge layer and there would be nice, even, single layers of graham cracker, fudge, and toasted marshmallows.

I purchased a kitchen torch from Amazon which luckily showed up the following day. Seriously, what did we do before Prime? I’ve always wanted a kitchen torch and this one was inexpensive and was easy to use! Toasting the marshmallows on top was exactly what was missing and pulled the entire recipe together. 

Note: you will have to purchase the butane fuel for the torch as it doesn’t come with it. We were able to find one at our local grocery store. You can also purchase butane fuel directly through Amazon. Make sure you get one with a thin, long nozzle if you get the same torch I purchased.

My little one loved watching me torch them. She was in charge of blowing out the marshmallows that caught on fire. We chose to torch them until they were pretty crisp since that’s how we like our toasted marshmallows. Feel free to torch yours to your liking.

If you don’t have a torch and don’t plan on purchasing one, you can also place the baking dish into your broiler for 1 minute. You should get the same results. Just keep an eye on it so that they don’t burn. This also may make your fudge a little softer since it’s getting warmed up from all sides.

Since you are reading this, you can probably guess that this S’mores Fudge Bars recipe was a hit with my kids. My 12-year-old ate an entire bar as soon as I gave her the go-ahead (I had to take pictures first). She said it was perfect and she could taste every ingredient, unlike before when the fudge was so overpowering.

My 8-year-old couldn’t stop talking about the toasted marshmallows. She was fascinated that I was able to get that yummy, toasty flavor onto this fudge bar. She wasn’t suddenly too full to eat a full bar either. I call that a win!

I am sure that this s’mores fudge bar recipe is going to be a staple for our home all year long. It would be an excellent dish to bring to a summer BBQ or a great late-night treat, in front of a fire pit.

The steps in the photos above, show exactly how I make these delicious S’mores Fudge Bars.

Step 1: Place the graham crackers,  sugar, and salt into the food processor. 

Step 2: Pulse until the graham crackers are crumbs.

Step 3: Add your melted butter and pulse until combined.

Step 4: Press your graham cracker mixture into the bottom of a baking dish and bake.

Step 5: Place all of the fudge ingredients (except for the vanilla) into a pan and on low heat, stir consistently until smooth.

Step 6: Remove fudge from heat, stir in vanilla and pour on top of your graham cracker crust in an even layer.

Step 7: Top with mini marshmallows in one layer and refrigerate for at least 3 hours.

Step 8: Remove from refrigerator and when at room temperature, torch the marshmallows. Sprinkle chocolate chips and graham cracker crumbs on top if you desire. Cut and serve!

Description

These s’mores fudge bars pack all of the s’mores flavors you love into one incredible bar. It’s a graham cracker crust, a layer of chocolatey fudge, topped with toasted marshmallows. They’re not quite as messy but just as delicious.


Ingredients

Scale

Graham Cracker Crust:

  • 2 sleeves of graham crackers (approx 18-20)
  • 1/4 cup granulated sugar
  • 3/4 cup unsalted butter, melted
  • 1/2 tsp salt

Fudge:

  • 12 oz semi-sweet chocolate chips
  • 14 oz can sweetened condensed milk
  • 1 TBSP unsalted butter
  • 1/2 TBSP vanilla extract

Toppings:

  • 1.5 cups mini marshmallows
  • Extra semi-sweet chocolate chips (optional)
  • 1 crushed graham cracker (optional)


Instructions

  • Preheat the oven to 350º and line an 8×8 baking dish with aluminum foil.
  • Place the graham crackers, sugar, and salt into a food processor and pulse until they are ground into crumbs.
  • Add melted butter and pulse until combined.
  • Press the graham cracker mixture, in an even layer, into the bottom of your baking dish. Bake for 10 minutes.
  • Allow crust to cool while you make your fudge.
  • Add chocolate, condensed milk, and butter into a pan and heat on low. Make sure to consistently stir until smooth so that the chocolate doesn’t burn.
  • Once your fudge mixture is smooth, remove from heat and add vanilla. Stir just until combined.
  • Pour fudge on top of the graham cracker crust in one even layer.
  • Pour your marshmallows on top of the fudge, covering the fudge completely. Make sure that they are in one layer and press down just a bit to make sure they are sticking to the fudge as much as possible.
  • Allow it to cool on the counter until the bottom of the dish is cool to the touch and then refrigerate for at least 2-3 hours.
  • Once you are ready to serve, remove it from the refrigerator and allow the baking dish to get to room temperature (this is especially important if it’s glass).
  • Using a kitchen torch, torch the top of the marshmallows to your liking. Be careful that they don’t burn. The marshmallows will likely catch on fire and you will have to blow them out (just like you do when you toast marshmallows on an open fire).
  • Sprinkle chocolate chips and graham cracker crumbs on top (totally optional).
  • Cut into squares and serve!
