Hard to believe, but 2018 is almost over. It was a crazy year for our family. I turned my passion of writing and photography into my full time job and learned that I can support our family and have fun at the same time. We moved from our home of 7 years, welcomed a new four-legged friend into our family and traveled to a few of our favorite places. We welcomed new family members and said goodbye to a few people that will always hold a piece of our hearts. 2018 is a year we will never forget. While we have so many changes planned for 2019, we will continue sharing our favorite family-friendly recipes, such as these, in our 2018 super recipe roundup.
Shrimp + “Chorizo” Tostones Bowls
My fabulous Sister-in-Law Rosie, introduced us to these Chorizo + Shrimp Tostones Bowls, a couple of years ago. I’ve tried to recreate them, without the chorizo (since I stopped eating meat), but I just couldn’t get the flavor right. Until now.
Individual Banana Pudding Jars
The holidays are quickly approaching. For my super family, that means getting together, unplugging from our day to day responsibilities and enjoying every moment with those we love. A big part of our holiday gatherings is centered around the food we make. While we occasionally try new dishes, making certain dishes has become a tradition. One of our favorite desserts is banana pudding. This year, I’ve adapted a family favorite into individual banana pudding jars with a little twist.
Party Pizzas
Are you looking for a fast and easy meal that tastes great and is fun to make? These party pizzas aren’t just for parties, though they may cause you to celebrate when you taste how delicious they are. All you need are Bays English Muffins, marinara sauce, cheese, your favorite toppings and voila… party pizzas!

When it comes to entertaining for a football game, most people offer the same dishes. There’s only so much pizza and chicken wings you can eat, am I right?! So, what do you do when you want to wow your guests? I’m all about taking traditional recipes and giving them a fun twist, especially when we’re entertaining. I’m about to share two of my favorite recipes with you, but you might be surprised by the secret ingredient… horseradish.
Space Bark
My kids have a routine. They get home from school, grab a book and run to the kitchen for a little afternoon snack. While they usually select good-for-you snacks, occasionally I like to surprise them with something a little sweet. Space Bark was so yummy, I had to share it!
Pumpkin Dessert Recipes
It’s FALL! You know what that means? Pumpkin EVERYTHING. Call me basic if you want, but it’s a must for Fall. Give me all the pumpkin lattes, pumpkin breads and most of all, pumpkin desserts! And while pumpkin spice is delicious and we have to consume everything we can during Fall because pumpkin season will be gone in the blink of an eye, with pumpkin desserts comes sugar (in most cases at least). So if pumpkin is this Super Mom’s kryptonite, I have to make sure I’m stocked up on our secret weapon. Especially when it comes to our favorite fall pumpkin dessert recipes.
Vegetarian Matzo Ball Soup
When I stopped eating meat, almost a year ago, I dreaded the idea of never being able to feel that feeling again. In fact, all of my Nana’s favorite recipes have meat in them. I began trying to figure out ways to rework her recipes, without the meat. This week, I tried making matzo ball soup without the chicken and I was shocked that it was just as good! While my relatives would probably disagree (because they haven’t tried it yet), I would say that this one is a close 2nd to hers.
Mixed Berry Jam
About a month into Summer we were already scrambling to find things to do in my house. Crafts are fun but messy. Going on adventures is fun but those can get expensive. Napping is awesome but my kids don’t seem to want to get on the bandwagon with that one. So I decided to try something brand new, something I thought I could never do, but something that the girls and I could do together… small-batch canning. And you want to know a secret? It was actually easy and FUN!
No Bake Cookie Ice Cream Sandwiches
Summertime in our house is a time to learn new things. My teenager has decided that this year, she wants to learn to bake. So, we printed out a number of recipes, picked up some ingredients and I braced myself for the sugar-fest that was about to happen. I had no idea that her little plan would lead to discovering our new favorite dessert, ice cream sandwiches using no bake cookies.

Can I confess something? My family will eat tacos every single day of the week without complaint. Give them a tortilla filled with just about anything and they are happy (especially if there is avocado involved). Since my husband and I stopped eating meat, we’ve had fun finding and creating different meatless taco options. You would be surprised how many delicious vegetarian options there are out there and you don’t have to be a vegetarian to enjoy them! One of our new favorite recipes are these Vegetarian Lentil Tacos with Avocado and Salsa Fresca. These tacos are fresh, filling and have a kick to them!
Fresh Fruit + Lemonade Popsicles
Summer is just around the corner and we are already planning our outdoor family activities. Whether it’s the pool, the beach or the park, I always make sure to have something on hand to cool us all down because let’s face it, the summer sun is no joke (especially here in Florida). We always bring along a cooler filled with fresh fruits and veggies, our favorite chilled Tampico juice drinks and these fun and easy-to-make, fresh fruit popsicles!
Corn, Tomato and Avocado Salsa
Lately, when I think of fresh corn, I immediately think salsa. What’s better than a fresh salsa? It makes a great side dish or a dip for your favorite chips. I’m excited to share my take on the Corn, Tomato and Avocado Salsa from the Fresh From Florida website. We had to alter it just a bit because kids can be picky.
The Ultimate Vegetarian Sandwich
When you don’t eat meat, you have to come up with new options for lunch. There are only so many salads you can eat, let’s be honest. Sometimes you just want a good ol’ sandwich. Being new to the vegetarian world, we have struggled with finding lunches that fill us up and also provide the nutrients we need. So we went on the hunt for a satisfying vegetarian sandwich and I’m happy to say that we found it.
Vegan Zucchini Bacon
Before we decided to cut meat from our diet, we, like most people, LOVED bacon. We would eat it as often as we could. Whether it was for breakfast, in a sandwich or even in ice cream, we never passed up an opportunity. So when we decided to transition into this new healthier lifestyle, we had to find a way to substitute our favorite food. So far, this zucchini bacon is my favorite!
Dairy Free Smoothie Bowl
Now that we’ve found a few smoothies we love, we decided to kick it up a notch, adding fresh fruit and other fun toppings. Smoothie bowls, where have you been all my life? My kids can’t get enough (and neither can Mom and Dad)! Since we are incorporating less dairy and more plants this year, we are making smarter choices when it comes to ingredients. We are constantly looking for yummy, good-for-you snacks. Our family recently discovered that we all really love granola! I mean, what’s not to love? Oats, nuts, dried fruits, maple syrup, all baked until it’s toasted and golden brown. Drooling yet? While store bought granola is good, there is nothing quite like homemade granola. I’m excited to share this vegan granola recipe that is not only delicious, but so easy to make!
Dairy Free Mango Coconut Green Smoothie
I was given a challenge by my kids… find a green smoothie that doesn’t taste like a green smoothie. Confused? Yep… I was too. I personally love green smoothies and green juices but I know that when it comes to kids, their taste buds want sweet, yummy and fruity. So we were on the hunt for the unicorn of green smoothies. Just when I thought it was impossible, I found a combination that could be exactly what I was looking for.

What to do when you have too many recipes to choose from? Here are my top five from the list; the banana pudding, mango coconut smoothie, banana bread, lentil tacos and pumpkin dessert. I know my list has more desserts compared to main courses but it was a very difficult choice to choose 5.
Oh my gosh, so many delicious recipes, I don’t know where to start. I love that you make food that’s picky eater friendly. I would actually eat so many things on this list (and not just the desserts, lol).

This is a great selections of recipes. I love that most of these do not contain meat. I’m so ready to let it go from my diet, my daughters want to go vegan, but my son and hubbie are not giving in to this idea.
