Searching for the Unicorn of Green Smoothies?

I was given a challenge by my kids… find a green smoothie that doesn’t taste like a green smoothie.  Confused? Yep… I was too.  I personally love green smoothies and green juices but I know that when it comes to kids, their taste buds want sweet, yummy and fruity.  So we were on the hunt for the unicorn of green smoothies.  Just when I thought it was impossible, I found a combination that could be exactly what I was looking for.

Packed with spinach, this smoothie includes good for you foods like banana, mango, freshly squeezed orange juice and coconut milk.  I added some maple syrup for a little added sweetness and topped with shredded coconut.  My husband and I loved it!  It had been so long since we had a green smoothie and it was like seeing an old friend.

My Kids Opinion.

My kids?  Well, they didn’t share the sentiment.  Unfortunately, it was “too spinachy” though if you’ve ever had a smoothie with spinach in it, you’ll probably agree that you can’t really taste the spinach.  While they love cooked spinach, they just can’t be convinced that raw spinach is good too. But don’t think I’m giving up on that one!  I’m already working on another one to change their mind!

Low in fat and even lower in cholesterol, spinach is high in niacin and zinc, as well as protein, fiber, vitamins A, C, E and K, thiamin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper, and manganese. In other words, it’s loaded with good things for every part of your body!*

Description

The unicorn of green smoothies. It’s so good, it’s magical.


Ingredients

Scale
  • 1 cup fresh spinach leaves (packed)
  • 1 cup frozen chopped mango
  • 1/2 frozen banana
  • 3/4 cup canned coconut milk
  • 1/2 cup fresh squeezed orange juice
  • 2 tablespoons maple syrup
  • unsweetened coconut flakes (topping)

  1. Add all ingredients to your blender and blend until smooth.
  2. Top with coconut flakes!

  • I love green smoothies and i agree with you that you can’t really taste spinach that much in smoothies.
    I like the idea of adding mango too!

  • Mango coconut?? Sounds amazing! And smoothies are for sure the easiest way to sneak some greens in on your kiddos. My girls don’t even blink anymore at what we call the ‘Mean Green Smoothie’ with lots of fruits in it to keep the ‘green’ from being overpowering.

  • This looks so healthy and delicious! Something I’d want to drink. I love how easy it’s to make.

  • This looks fabulous. My only question is how coconut-y is it? I have tried and tried and coconut is not my favorite thing. I can cook with coconut milk because I generally can’t taste it. I will have to check this out!

  • It’s too bad your kids couldn’t be swayed. I really love spinach and agree that you really can’t taste it in smoothies, but it provides a great source of iron and other nutrients.
