While today is National Taco Day, we’ve decided to share one of our favorite taco recipes. Technically, it’s not a taco, it’s a tostada, but it’s just as delicious whether it’s in a folded tortilla shell or on top of a flat corn tostada. Lime and cilantro shrimp with a zesty sauce will wow your tastebuds and will be a huge hit for your family!
The first time I made this dish for my family, I was shocked at the reaction. My youngest, who swears she doesn’t like seafood, ate more shrimp than I knew her tiny body could handle. My oldest kept talking about the “explosion of flavors” in her mouth. It was as though she had just left one of those fancy cooking shows. I’m pretty sure my husband ate at least 6 and was still asking for more. So when you find a recipe like this lime and cilantro shrimp tostada recipe, you have to make it often and share it with everyone.

Description
The perfect flavor combination of lime, cilantro and fresh shrimp, all on top of a corn tostada.
Ingredients
- 1 lb shrimp (peeled and deveined)
- 1 pkg corn tostadas
Shrimp Marinade
- 3 limes (juiced)
- ¼ cup cilantro (chopped)
- 3 cloves garlic (minced)
- 1 tbsp olive oil
- lime zest
- salt
Slaw
- 2 cups cabbage (shredded)
- ¼ red onion (chopped thin)
- ¼ cup cilantro (chopped)
- 1 haas avocado (cubed)
- 1 lime (juiced)
- 1 tbsp olive oil
- salt
Sauce
- 1/4 cup mayo
- 1 tbsp vinegar
- 1 tbsp water
- 1 tsp garlic powder
- salt
- lime zest
- 1 tbsp paprika
Instructions
- Whisk together all ingredients for the shrimp marinade. Add shrimp and mix until shrimp is fully covered. Cover bowl and marinate in refrigerator for 20 minutes.
- Meanwhile, combine all slaw ingredients in another bowl. Cover and refrigerate.
- In a small bowl, add all sauce ingredients and whisk until combined.
- Preheat pan or grill on medium heat. Grill shrimp until pink and fully cooked.
- Place tostada on plate. Top with slaw, 3-4 shrimp, drizzle sauce and top with chopped cilantro.

So you may be wondering why we chose shrimp. Well, up until a few weeks ago, I was a pescatarian. I had given up meat for over two years and shrimp was one of those ingredients that we tried to fit into meals at least twice a month.So aside from our favorite dijon shrimp scampi recipe, this lime and cilantro shrimp tostada is at the top of our family’s request list.
It makes a great family dinner because it’s super quick to make and gives everyone the option of building their own tostada. My kids love to “cook” and build their own meals. So you can set out the tostadas, the slaw, the shrimp and the sauce and allow them to make their own. I also put out some sliced lime wedges because my family likes theirs extra sour.
If you are a vegetarian, I also recommend trying our lentil taco recipe. The avocado and salsa fresca is so yummy! It’s every bit of happiness in your mouth, without the meat and perfect for National Taco Day, or any day, really.
