Summer is the time for cookouts, campouts and family time. With National Graham Cracker Day just around the corner, on July 5th, I thought it would be fun to try to transform our family favorite, s’mores, into something a little different and more appropriate for these hot summer months. This s’mores pudding pie is unlike anything you’ve ever tasted and the best part is, it’s super easy to make!
We start with a graham cracker crust. And not just any graham cracker crust, but a crust that is so easy and so delicious, you might never buy another store bought crust again. I can eat the crust on it’s own, it’s so good. It’s also really delicious if you’re making a key lime pie. You can print out the full recipe for our Toasted Coconut Graham Cracker crust here. It’s the perfect base for this delicious pie!
Next we are going to work on the chocolate pudding filling. For times sake, I went with a store bought chocolate pudding and pie filling, but if you have the time and are able to make homemade chocolate pudding, this will only taste that much better!
While I don’t have a personal chocolate pudding recipe to share with you, I was able to find one from Simply Recipes. In full disclosure, I’ve not personally tried it, but it has received really high reviews and has just a few simple ingredients, which I love! I can only imagine how much better our s’mores pudding pie with a homemade pudding. But if you need something quick, store-bought pudding mix will work!
Now that we have the graham cracker and the chocolate, the only thing left are the yummy, toasty marshmallows. It’s very important that you use mini marshmallows and make sure that when you cover the pudding, that you cover it completely with marshmallows. Also, make sure that you only leave the pie under the broiler for 1 minute. Anything longer and they may burn! Just keep an eye on it and try not to let anything or anyone distract you.
Once you remove it from the broiler, you can sprinkle mini chocolate chips and graham cracker crumbs on top. It makes it just a little prettier but also layers on those flavors as well. You may find that the chocolate chips will melt if you put them on right after you take it out of the oven, but that’s ok! They will harden up again once you refrigerate it.
There is no specific amount of time that you need to refrigerate this s’mores pudding pie. We wound up refrigerating ours overnight, just because I wanted to make sure that the pudding was fully set and chilled. You can leave it in the refrigerator for up to a week. Just make sure that you cover it in an airtight container or with foil.
This s’mores pudding pie goes well with a tall, cold glass of milk or a cup of coffee. It’s great for those Summer days when you’re grilling in the backyard, or for a family treat year round. If you and your family love s’mores, you will absolutely love this s’mores pudding pie.

Description
All of the delicious flavors of a s’more come together in this incredibly delicious s’mores pudding pie. Homemade graham cracker crust and chocolate pudding filling are topped with toasted mini marshmallows.
Ingredients
Pie Crust:
- 1 1/2 cups graham cracker crumbs
- 3/4 cup sweetened coconut, toasted
- 10 Tbsp unsalted butter, melted
Pie Filling:
- 5.9 oz box of chocolate pudding mix
- 3 cups milk
Topping:
- 2 cups mini marshmallows
- mini semi-sweet chocolate chips (optional)
- graham cracker crumbs (optional)
Instructions
- Start by making our toasted coconut graham cracker crust.
- While crust is cooling, whisk milk and pudding mix together for 2 full minutes. Let sit for 5 minutes.
- Pour pudding onto cooled crust and spread evenly.
- Top with mini marshmallows (make sure pudding is completely covered).
- Place under the broiler for 1 minute (no longer).
- Remove and sprinkle with mini chocolate chips and graham cracker crumbs (if you desire).
- Cover and refrigerate until you’re ready to serve.
